I love my wife, my kiddo, our dog, and most of all...MY LIFE! I couldn't ask for anything more than what I already have. I get to spend time with those that love me, while doing the things that I love!!!


5 minute chocolate cake for one

I am not a huge chocolate fan as I am sure all of you know. But when this came through my e-mail at work I thought of all of you wonderful women in my life who LOOOOOVE chocolate.

Now we are all only 5 minutes away from chocolate cake at any time of the day or night!

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.

Pour in the milk and oil and mix well..

Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.

The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired.
EAT ! (this can serve 2 if you want to feel slightly more virtuous).



So, tomorrow night we are leaving to drive to Texas. When I say we I mean Lorelli, Rob, and me. It is exciting. There are not any real big plans. I am going to spend time with my boyfriend and my friends. That is the extent of the plan. Friday night I want to go to the Alumni Band Concert. Saturday we are having drinks with friends. Monday we are going to a cookout at a friend's house. And through most of this time Lorelli will be hanging out with her two grandmothers. I had contemplated not bringing her on vacation but I felt like a bad daughter going all the way to Texas and not bringing my daughter to see her extended family. So they are going to be my babysitters this weekend. I kinda like the idea. For the most part. I can't believe I will be there for so many days. Thursday through Tuesday. Of course, Tuesday doesn't really count because we will be leaving in the morning. I can't wait to get home and spend time with friends. I have seriously been missing my friends. And it seems like all of them are going through some incredibly tough times right now and I don't like being so far away from them at this point in time.

So, I have a lot on my prayer plate right now so I am reaching out to you guys to help me in prayer. My very good friend out here is going through a very tough time right now as she contemplates where and when to move. My daughter's babysitter/"adoptive" grandmother is having a difficult time right now, physically, due to her MS. My stepdad is waiting to hear back on a job since he has been unemployed for more than 6 months now. My best friend back home is dealing with things since her husband is unemployed now. My good friend from my old job just found out that her younger sister has cervical cancer, AT NINETEEN YEARS OLD. And another good friend is dealing with the failing health of her father and the fact that they had to put him in a nursing home finally to be taken care of. And while you're at it, if you don't mind, throw a little prayer in there for me too. Just because.

I have decided I want to go back to school. I want to get into a nursing program. I am growing tired of this accounting stuff. I don't see me being happy doing this the rest of my life. As many of you know, I was in the physical therapy program many years ago - until I had to have beack surgery. I then, after discussion with my doctors, decided not to go into physical therapy. But, I am missing the challenge of school. I want to learn new things. I want to get into the medical field that I know and love. I want to be a nurse. And more specifically, a neo-natal nurse. I am not sure how to do all this, but I have started doing some research. I am hoping to be back in school byt January. There is a lot to take into consideration. And, of course, I will need to find some sort of financial aid. So, we will see.

I am still contemplating Lorelli's school options. I have almost exclusively decided to homeschool her. I think it will be better for her education. I believe that I can do a better job than any of the schools around her. I believe I can challenge her more. And I think she will excel. There is much more research I need to do to get there, but I am determined to make this work somehow.


Not Me! Monday

Welcome to this week’s edition of Not Me! Monday. MckMama started this blog carnival many moons ago. Head on over to her blog and check out what everyone else DIDN’T do last week. This is a good soul-cleansing event and helps the new week to start fresh.

I did not start counting down the days until I go to Texas last Monday. I would never be so excited to go to a hot dry state for my vacation that I would start counting down 11 days in advance. And I most certainly would not have started counting down the hours at 113 hours to go. And I definitely do not know that it is only 60 hours to go until I am on the road. No one looks THAT forward to their vacation.

I definitely did not serve my daughter a dinner of turkey dogs on wheat buns the other night and a glass of cranberry juice. I always plan my meals in advance. I also always make sure that she has 2 veggies, meat, and a starch.

I did not, once again, wait to do laundry until I realized my daughter had only 1 clean pair of panties left in her drawer. A super-mom stays on top of these things.

I have not been super hormonal and emotional this past couple days/week/month. I did not get a big attitude because my wonderful loving boyfriend did not share some important potentially very positive news with me until the next day. I did not walk out of the room and not talk to him for hours. I don’t pout like that. And I definitely don’t wear my feelings on the cusp of my sleeve like that.

I did not text all my friends and tell them that my daughter was incredible smart and had just told me informed me that she could add. And then proceeded to tell me the correct answers to 1+1, 2+2, 3+3, 4+4, and 5+5.

I also did not text all my friends and family to tell them that Lorelli had said, “Mommy, these broccolis are like little green flowers that I can eat” because I thought it was hilarious and too cute sounding to keep to myself.

I did not put grocery shopping off until we had absolutely ZERO vegetables left in the house. That would be lazy and ridiculous.

And…lastly…I was not completely shocked when, as we were watching a movie last night Lorelli said, “That’s Incredible Hulk, Mommy.” Of course Incredible didn’t really sound like that…more like awkwanible…but she definitely knew what we were watching. I definitely did not laugh and give her a hug and praise her.

Not Me! Monday

Welcome back to Not Me! Mondays. MckMama started this blog circus a long time ago and we have all picked up on it. I believe that it helps us to start the week fresh and new if you can air out the dirty laundry of last week.

I DID NOT get completely grossed out when my daughter woke up throwing up Saturday morning. As a mom, I understand that these things happen. I have a steel stomach that does not get upset when my poor little child gets so sick that she comes running in to my room at 5 am and ends up vomiting IN MY HANDS!!!

I WOULDN'T pop my daughter's bottom for going poopoo in her panties. I would first ask questions. I would then realize that she didn't MEAN to go in her panties. That she had thought that she had gas. I also would NOT realize this until after the second time that she went in her panties.

I did not pick up my child and carry her at arms length to put her in the shower just in case there were more GAS incidences.

I did not laugh at my child when she wanted to pout because I wouldn't let her have any cheetos. I also did not take a picture of said pouting to post here on my Not Me! post.

I did not look like a BAD MOM at Burlington Coat Factory the other night when we were at the mall. I was with my boyfriend checking out and looked up to see my daughter wallking past the checkout coutners hand in hand with a store clerk to go to the paging system because she was alone. She had been with my good friend who had LET HER WALK OFF to come back to me. I also DID NOT get furious with my friend for letting A THREE YEAR OLD WALK OFF BY HERSELF!!!! I also did not put my daughter in timeout at the front check out for thinking that she could walk back to my by herself.

I am not planning on making a pie for my boss's birthday because he doesn't care for cake. A Coconut cream pie. Which I have never made before. It will NOT be delicious and time consuming and fattening all at once.

I did not go to three separate WalMarts searching for THE perfect shoe in my size. I had seen it while I was most certainly not shopping in WalMart. I despise WalMart. They are evil, I believe. But my friend was driving and thats where she wanted to pick up a few groceries. And where I saw THE shoe. In a size 6. When I wear an 8 1/2. After buying the 8 1/2 in the 2nd store and wearing them the next day, I did not decide that I need a 9 in that particular shoe.

That's all I have for now. I will probably be posting again later to tell you all about everything else that is going on. I have made big decisions this last week. And big decisions have been made that affect me. I will tell you all about it very soon. But for now, my break is over and I must get back to work.
